1. Place your butter in a skillet and melt over medium heat. Do not burn. 2. Add your sausage and cook until brown. When the sides are a little more cooked and the middle isn't wet from water.
1. In a large skillet, sauté the onions until translucent.
2. Add the garlic and cook for 30 seconds.
3. Add the omelette mixture and sauté over medium heat for 2 minutes. Add the spinach and mix well.
4. When the spinach starts to wilt, add the cheddar cheese and cook for 1 minute.
5. Remove from heat and add chopped tomatoes and salt and pepper to taste.
6. Divide the omelette equally between two plates and serve with some shredded cheese and green onions on the side.
